shares his special recipes to add more cheer at your dinner table!
Cinnamon Stars You need: 700 grams almond meal, 240 grams egg whites, 750 grams marzipan, 625 grams castor sugar, 500 grams icing sugar,40 grams cinnamon powder, 70 grams refined flour For icing: 500 grams icing sugar, 150 grams egg whites You must: Add all the dry ingredients together, except the icing. Cream marzipan, and add the egg whites gradually and cream further. Add all the dry ingredients to the creamed marzipan, and make a smooth mixture. Let the mixture stand in the fridge overnight. Roll the mixture with the rolling pin. Whip the icing ingredients and apply the prepared icing over the cookie mixture. Now cut the cookie mixture with the help of the cookie cutter and bake them at moderate temperature in a pre-heated oven for 10-15 minutes.
Christmas Fruit Cake You need: 3,000 grams unsalted butter, 3,000 grams castor sugar, 4,000 ml whole eggs, 3,800 grams refined flour, 200 grams black jack, 7,500 grams sultanas, 2,000 grams raisins, 3,000 grams mixed peels, 1,500 grams, 2,000 ml brandy/ orange juice, 50 grams spice
You must: Pre heat the oven to 150°C. Clean all the fruits and soak them in brandy or orange juice overnight. Put all the ingredients into a bowl and beat together well. Turn into the cake tin and smooth the surface. Bake for about 90 minutes or until a skewer inserted in the centre of the cake come out clean. Once the cake has cooled, you can decorate it using icing sugar.
